Japanese fried chicken is also known as "donjan", or "karaage (ka ra a ge)" as it is called in Neon. Although the kanji "tangyaki" is often associated with Japanese fried chicken, the Japanese word "tangyaki" is actually a style of cooking, not a cuisine. Food critic and culinary educator Yukio Hattori once said, "Tang yangげ generally refers to a deep-fried dish in which the ingredients are coated in flour or chestnut flour, and was introduced to Japan from China after World War II."
Tangyaki (red ginger), a traditional Japanese pickle of fresh ginger in plum juice, is a seasoning often used in Japanese cuisine for its sweet and sour flavor and appetite-boosting properties. Red ginger tang yang is made from skinned leg meat, marinated in Japanese soy sauce, sake, and ajinomoto, with red ginger added to the tang yang powder for a bright red color and rich flavor.
